This rice, spinach and Cheddar pie is a cinch to prepare—especially if you have leftover cooked rice. If you don’t, follow package directions for 4 servings to get about 3 cups cooked rice. Serve with steamed artichokes with light mayo mixed with lemon for dipping.

Family Hit!

This was great, my whole family liked it. I might try some old bay to spice it up a bit more next time but it wasn't bland. I have to wonder if everyone who found it so was using extra sharp cheddar and not just sharp or mild cheddar, the extra sharp taste was definitely noticeable in the end result and I felt that's what kept it from being bland.

I made this just like the recipe called for except I substitute egg whites in place of 3 whole eggs and then just used 1 whole egg to make 4 total. There was not much flavor at all though. More cheese would be good, but then it would be out of the healthy range probably. Maybe more spices of some kind would help. Not sure... I probably will not make this again.

I used a large onion and more cheese and chopped bacon, extra salt and pepper and it was STILL bland! So when I heated up the leftovers for lunch the next day, I added a dollop of sour cream and Yum sauce---that made all the difference! For kids, you may want to have the ketchup ready.

Very easy and beautiful. It made a lot! My daughter even ate it!

Loved this and will make it for the school lunches and picnics I added a 1/2 of chilli and chopped a bit of sautéed a small amount of cauliflower and it was not bland at all .I couldn't stop eating it

Fabulous

I used asparagus, scallions & zucchini and left over cooked brown rice. Also my favorite Tuscan spice blend. Tastes great & looks so appetizing. This recipe lends itself to so many variations. Thanks!
