This rice, spinach and Cheddar pie is a cinch to prepare—especially if you have leftover cooked rice. If you don’t, follow package directions for 4 servings to get about 3 cups cooked rice. Serve with steamed artichokes with light mayo mixed with lemon for dipping.

Better than I expected

I substituted brown for black rice & added squash. Lots of garlic and old sharp cheddar. So Good!

Yummy

I used almond milk in place of milk, and I added the juice of 1 lemon. I also mixed in one can of canned salmon, and I added about a teaspoon of old bay seasoning in place of the salt on the ingredients list. I also I added a couple of dashes of Italian seasoning and I added one extra garlic clove. I dusted the top with Italian breadcrumbs and freshly shredded mozzarella. It was DELISH. I will definitely make this again!

Too bland

I made this using the suggestion of substituting feta for the cheddar cheese. I used about 1 1/4 cups feta and still found it very bland.. I ended up mixing up some low sodium cream of mushroom soup and sour cream that I heated up as a sort of gravy, and topped with some french fried onions. Still bland and definitely not as healthy as I would have hoped, but at least edible.

Great vegetarian recipe

I have made this recipe many times. Sometimes
I substitue feta for the cheddar and other times I have substitued wheat berries instead of the brown rice. I used basmati brown rice. My whole family absolutely loves this dish. My daughter asked me to make her a vegetarian dish for her birthday and she loved it. I have also added zucchini along with the spinach. I have given this recipe to all of my friends.
