Raspberries & Mangoes
From EatingWell: The EatingWell Healthy in a Hurry Cookbook (2006)
Toasted almonds add texture to a simple combination of raspberries and mango.
- 1 cup raspberries
- 1 cup diced mango
- 1 teaspoon sugar
- 1/4 cup toasted sliced almonds, (see Tip)
- Toss raspberries and mango with sugar. Sprinkle with almonds before serving.
Tips & Notes
- Tip: To toast sliced almonds, place in a small dry skillet and cook over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.
