As with all EatingWell recipes, this one is fairly straight-forward and easy to follow. I really like this salad for its bright flavor. With mango and vinegar and toasted sesame oil you can't go wrong. My only critique was that I found it a little heavy on the scallions. Next time I'll only use one, instead of two. Easy fix. As great source of fiber, I'm sure to make this many times over the summer.





Loved this recipe - I substituted peaches for the mango (the mangos at the store weren't ripe). Delicious!

I made it as the recipe stated, but then I added a tablespoon of Organic Unfiltered Apple Cider Vinegar and spicy chili powder to give it extra kick! Served with sliced avocado, blue corn chips and salsa and a nice cold Mexican beer with lime! My husband loved this special surprise for a late Friday afternoon lunch! I believe toasting the Quinoa is an excellent idea and now I have become a fan of this fantastic grain. I will always keep Quinoa as a staple in my pantry after this recipe! Thank you!

I too have fallen in love with quinoa after my mother introduced me to it this past winter. A really good tip {among many} that she taught me was to keep your uncooked quinoa in the freezer, as it both stays fresher, and lasts longer. Also, since I live alone, and even for her and my father, there is always too much cooked quinoa left over, so she also puts that in the freezer to use as a shortcut for the next time she uses a quinoa recipe; and now she gets to skip the first step! This grain is just the greatest, isn't it?!
