Curry quick enough for a weeknight supper - especially if you use precut cauliflower and baby spinach.

My boyfriend was just diagnosted with high blood pressure, and we luck upon this recipe. With all the different ingredients it made for a very flavorful meal, where we didn't really miss the usual amount of salt.

It definitely needed flavor modifications and not a typical 'curry'. I had to add a substantial amount of curry paste to get the heat right. I think it is a good, healthy dish but if you are looking for traditional curry, this isn't it. But, it was still good and healthy with added spices and more paste.

We tried this as I am allergic to peanuts and can not eat Thai food out. We liked this as an alternative.
