Curry quick enough for a weeknight supper - especially if you use precut cauliflower and baby spinach.

READER'S COMMENT:
"This was absolutely delicious! We used a mixture of vegetables -- including mustard greens -- and 1/2 jar of red curry. Wonderful flavor. We're sure to repeat this again and again. "

It definitely needed flavor modifications and not a typical 'curry'. I had to add a substantial amount of curry paste to get the heat right. I think it is a good, healthy dish but if you are looking for traditional curry, this isn't it. But, it was still good and healthy with added spices and more paste.

We tried this as I am allergic to peanuts and can not eat Thai food out. We liked this as an alternative.

It was tasteless! I had to visit my spicerack afterwards to get any flavor out of it.
