Schmear ricotta cheese and your favorite jam on graham crackers for an instant "cheesecake."

4 whole-wheat graham crackers
4 tablespoons part-skim ricotta cheese
8 teaspoons jam

Spread each graham cracker with 1 tablespoon part-skim ricotta cheese and 2 teaspoons jam.

NUTRITION INFORMATION: Per serving: 239 calories; 6 g fat (2 g sat, 1 g mono); 10 mg cholesterol; 42 g carbohydrate; 7 g protein; 2 g fiber; 259 mg sodium; 39 mg potassium.

This is a perfect snack for my grandma when she goes to dialysis. =)

These were surprisingly good and very simple to make. I wasn't sure about the idea of the ricotta cheese, but it really did taste like cheesecake to me. Give them a try!

I substituted cottage cheese and used no cracker. Less jelly next time. I needed a bite to eat to take bedtime meds.

Hi, the carb count is confusing. 42 and then 3 which is it?

For Shirley - 1 carbohydrate serving = 15 grams. So 42 grams = 3 carbohydrate servings. With the crackers this is a high carb snack for me.
