Potato Galette

Thinly sliced potatoes are tossed with oil, salt and pepper then baked to crispy perfection in this pretty side dish.

Makes 4 servings

ACTIVE TIME: 10 minutes

TOTAL TIME: 40 minutes

EASE OF PREPARATION: Easy

4 teaspoons extra-virgin olive oil, divided
1 pound small Yukon Gold potatoes, very thinly sliced
Salt & freshly ground pepper to taste

1. Preheat oven to 450°F. Lightly oil a baking sheet with 1 teaspoon oil.
2. Toss potato slices with the remaining 3 teaspoons oil and season with salt and pepper. Arrange the potato slices in an overlapping 10-inch circle on the prepared baking sheet, forming a layered potato cake. Bake until tender and golden brown, 25 to 30 minutes.

NUTRITION INFORMATION: Per serving: 124 calories; 4 g fat (0 g sat, 3 g mono); 0 mg cholesterol; 20 g carbohydrate; 2 g protein; 2 g fiber; 145 mg sodium; 621 mg potassium.

I am constantly surprised that so many recipes call for "salt". If I am going to salt this recipe - what kind of salt am I going to use?

Nice to have potato chips without the high fat. The salt I used is Celtic Salt....it is said to lower blood pressure as it is low in sodium and tastes great!

If you're trying to go lower sodium you can also use less salt than what it call for, or even no salt at all, it will a bit more bland, but still good. I added some thinly sliced onion, a little paprika and some rosemary and it was great!
