I love mushrooms so I had to try this dish. Didn't change anything except I used only a teaspoon of soy sauce. Served on a toasted bun with a side of soup. This is a keeper!

Cheese steaks are a Philadelphia tradition: thin slices from a rich and very fatty slab of beef, fried up and topped with a heavy cheese sauce. We've cut down on the fat considerably - but not on the taste. All it needs is a cold beer or a glass of pinot noir on the side. Make this vegetarian by using vegetable broth in place of chicken stock.

Yum! I can't resist changing things a bit, so I grilled the veggies, which added a nice depth of flavour. Then I combined the sauce ingredients in a pan and let them simmer- they got so amazingly thick! I toasted my bread, added sauce, veggies, and vegan cheese. And that was lunch!
This is a great tasting, versatile dinner that should be fairly easy to prepare for novices and experts alike. It is low enough in calories to give you some leeway for experimentation if you want to kick up the flavor a bit.
I used green pepper instead of red, an italian blend cheese slice instead of just provolone, and halved the recipe. Even with half the recipe I still used less than half the required mushroom. The way the mushrooms were sliced, my son was not a big fan, but loved everything else.
I never liked philly cheese steaks when I ate meat and I don't like mushrooms at all, but I tried this recipe. I was absolutely satisifed. I used wheat french bread and cut it like a sub. It was the most delicious sandwich I have had in a long time and if you are like me and have a hard time finding great vegetarian recipes, try this one! The sauce was so good.
