Pork, White Bean & Kale Soup

Kale is matched up here with white beans and chunks of lean pork tenderloin to create a soup that's satisfying and quick to make. Smoked paprika gives the soup a Spanish flair so some warm bread and sliced Manchego cheese would go well on the side.

Easy, flavorful & absolutely delicious!

I used leftover, already roasted pork tenderloin & spinach instead of Kale. I added the pork with the beans about 15 mins. before serving & was amazed at how tender the pork had become. My entire family LOVED it! I will definitely make this again.

Tasty, hearty soup

Tasty soup! I switched canned tomatoes instead of fresh and garbanzo beans instead of white beans. Also added some zucchini, which was good. Wasn't crazy about the kale, so I may switch for some spinach instead next time. I might try adding a little lemon juice next time too at the end.

I am a big gardener and am always looking for new ways to use kale. I loved this soup. I did add 1 tsp of kosher salt at the end, as well as 1/2 a bag of frozen corn just because I thought the yellow color would look pretty. I substituted a 28 oz can of diced tomatoes for the fresh because that's what I had on hand. Very easy, very pretty, and very yummy.

I made this with left over pork roast and a combination of black and navy beans....it got rave reviews.
