I made this recipe because I love plantains. I eat them every week. This was hearty and filling... perfect for me on a cold Minnesota winter night! The leftovers tasted even better! If I were to make it again, I'd make it with green plantains though. I feel that the ripe plantain loses itself in this dish. A green one is typically what's used in soup-like recipes. Only complaint is that the dish isn't cheap to make. Pork tenderloin is not cheap! Either way, I recommend it.
