Fluffy yumminess!

I just made pancakes using this recipe and obtained the most gorgeous fluffiest pancakes! My Husband said, at first bite, "Throw out all your other pancake recipes"! The only changes I made;
1) left out the poppy seeds
2) added 2 tsp of pure vanilla extract (instead of 3)
3) added 1 tsp of fresh squeezed lemon juice along with the zest.
They cooked quickly, oh and before serving I popped them in the microwave for 30 secs as I noticed a little raw batter. Served 2 each with maple syrup and macerated strawberries. Freezing the other 5 1/2. ... So tempted to have another one! : p

Straightforward recipe

This recipe is fantastic! I plan to make them as muffins next time and add the lemon curd for icing! I used crisco instead of cooking spray and it may just be my waffle iron but these stuck to them and the inside was a bit doughy I guess from using yogurt. I just made them as pancakes instead. Very delicious.
