Prepared according to recipe except I added more chipotle peppers in adobo sauce and corn fresh off the cob. Everyone really enjoyed salad.

What about pinto beans not packed with added salt? I find it healhier and just as tasty.

This recipe rocks! I made it for a pot luck at work and it's been a requested item ever since. The chipotle allows you to control the heat (we like it spicy) to your tastes. It's simple to prepare and the ingredients are all readily available at your supermarket.
I really enjoyed this recipe. It gets better as it ages because the flavors in the dressing really develop with time. The molasses was a little strong, but I adjusted the taste by adding a little more olive oil and 2tbsp of white vinegar to get a more tangy and less overly sweet flavor.
