Pineapple with Mango Coulis

  • 1 small mango, diced
  • 1.5 tablespoons dark rum
  • 1 1/2 tablespoons lime juice
  • 1 teaspoon lime zest
  • Sugar, to taste
  • Fresh pineapple spears, or chunks


  1. Puree the mango with the rum, lime juice and lime zest in a food processor or blender. Add sugar to taste. Serve over pineapple
