This Southern favorite is a simple blend of Cheddar, mayonnaise and pimientos. If you like spicy foods, add a few shakes of hot sauce. Serve with crackers for an appetizer or as a sandwich spread for lunch!

Healthy alternative to the mayo - plain Greek Yogurt

Pimento Cheese is something I grew up on in the South. However, trying to watch my intake of empty calories, I wanted to find a way to make this comfort food without the extra calories. I used plain Greek Yogurt and could not tell the difference in taste or satisfaction. Great on bread and stuffed into celery!

Wow!!

I just made this today and it was great. I was worried about low-fat mayo and low-fat cheese tasting yucky, but the pimiento over powers and it tastes great. Will definitely make this again.

I've only had Pimento Cheese heated. Place on low-calorie bread and stick it in a heated oven for a few minutes. Trust me, delicious!

Very good with green olives

This is also very good using pimento stuffed green olives instead of pimentos.

I love this recipe and have made it many times. I usually blend 2T nayonnaise (I just don't like the taste of regular mayo), with 1/2 c low fat cottage cheese because I really don't care for that much mayo. I've also substituted finely diced red onion for the scallion. Great!
