Coming from Europe, I crave pickled herring now and then. I can eat it straight out of the jar and love every bite.nI was looking for an attractive, easy, creative way to serve it at holiday gatherings that Include friends and family that may be unfamiliar with pickled herring served straight up. This recipe answered all those requirements, and folks that never would have tried pickled herring found themselves tasting, and enjoying this Northern European treat because of the attractive and tasty presentation. This recipe has it all without a lot of work or effort: potato, herring, sour cream, onion, dill. And it's so pretty people that wouldn't eat it if you told them what it is, try it and love it!
