Here is an easy way to serve a crowd a hearty breakfast before facing the elements for a day of winter sports. You can assemble it in the slow cooker in the evening and wake up to a bowl of hot, nourishing oatmeal. The slow cooker eliminates the need for constant stirring and ensures an exceptionally creamy consistency. It is important to use steel-cut oats; old-fashioned oats become too soft during slow-cooking.

Even better...

I've made this recipe except I used 2 apples peeled and chopped instead of the dried fruit (added fiber), 1/4 c. brown sugar substitue (sweeter, diabetes friendly), 1/2 c. raisins, 1 tsp. cinnamon and I added flaxseed. I would spray the slow cooker with nonstick cooking spray and cut the cooking time down to about 6 hours. Some of the oatmeal stuck to the sides but I just mixed it in and you couldn't tell. You can either cut the recipe in half or seperate it into individual servings and freeze them, then you can heat them up in the microwave for an easy breakfast! Yum!!!

Yum!

This oatmeal was easy and quick. With a dash of brown sugar, it definitely was a breakfast treat. As for the time, DO watch your crockpot. I have a Rival crockpot and it took about 5 hrs to cook, not 8 so watch it!

Eureka, I've found it!

I've never been a apricot fan, while they're one of my husband's favorites. Followed the advise of another commentor, and added cinnamon, little vanilla...then used honey instead of any other sweetner. All additions gave it another level of eureka, I've found the best taste..! Thing is, you can continue to alter the tastes by simply changing the spice, changing the fruits..all so easy. Love how easy it is to reheat...better than the instant with less of all the junk they put in those little packets. Try it...you'll like it!

It's creamy, thick and delicious; don't have to watch it cook; easy to change up with added spice or different fruit

Love this oatmeal!

I love this oatmeal. I buy large bags of mixed dried fruit and dried cranberries. I use 1 cup of oatmeal to 4 cups of water and add some of the chopped up fruit and cranberries (about 1/3 cup per the recipe). The cranberries give the oatmeal some sweetness. I use a 4 quart crockpot and it takes only about 3 hours. Glad I tried it during the day first. So, I cook this in the evening before going to bed. I poor into a container and slice off 1/4 of the oatmeal, heat and add skim milk. It's perfect. Thanks for the great recipe.

It made way too much for just me to eat (because my husband wouldn't try it! lol) so I put it in my blender, and added some water, and blended it up for my 7 month old. He loves it, and I love it as a baby food because it's got a good amount of fiber in it, as opposed to the rice cereal baby food, and there's nothing better than homemade food for babies too!
