Soaking oats and fruit in yogurt is how muesli is traditionally made. A great make-ahead breakfast if you're pressed for time in the morning but still want a healthy start to your day. Serve with sliced fruit and toasted nuts.


Overnight Muesli Recipe

6 servings, 1/2 cup each

Active Time: 5 minutes

Total Time: 8 hours (includes chilling time)

Ingredients

  • 1 cup uncooked oats, (quick or old-fashioned)
  • 2 cups nonfat plain yogurt
  • 1 8-ounce can crushed pineapple, (undrained)
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract

Preparation

  1. Stir oats, yogurt, pineapple, honey and vanilla until blended. Cover and refrigerate overnight.

Nutrition

Per serving: 140 calories; 1 g fat (0 g sat, 0 g mono); 2 mg cholesterol; 30 g carbohydrates; 5 g protein; 2 g fiber; 46 mg sodium; 100 mg potassium.

2 Carbohydrate Serving

Exchanges: 1/2 starch, 1 fruit, 1/2 fat-free milk
