Oatmeal & Whole-Wheat Bread Recipe

Ingredients

  • 2 cups rolled oats
  • 2 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 3 large eggs, lightly beaten
  • 1 cup packed brown sugar
  • 2 teaspoons baking soda
  • 2 cups buttermilk

Preparation

  1. Preheat oven to 350°F. Lightly oil a 9-by-5-inch loaf pan.
  2. Mix together oats, flour and baking powder in a large mixing bowl. Whisk together eggs and sugar in a medium bowl. Stir baking soda into buttermilk in a small bowl.
  3. Add buttermilk mixture to the egg mixture. Pour wet ingredients into the oatmeal mixture and beat with a wooden spoon until evenly blended.
  4. Turn into the prepared pan. Bake until top is golden brown and a cake tester inserted in the center comes out clean, about 50 minutes.
