The secret to a good cream sauce is always the same: not too much cream or it can be overpowering, masking the more delicate flavors. Here it contains a bountiful amount of mushrooms and is served over chicken breasts.

So rich and flavorful!

I got amazing wild mushrooms this weekend at a farmers’ market: lamb’s foot and lobster. So I used them in this recipe. It was so rich and flavorful. And I had the leftovers the next day...they were just as good. I served it with whole-grain rice pilaf and a spinach salad with apples, walnuts and aged goat cheese. Great combo!

I also use this recipe with fish....sole, cod, orange roughy....mild white.....just bake your fish (dot randomly with small pea size butter, salt and peppered) in a rimmed baking casserole...prepare the mushroom mixture separate and pour over the last 5-10 minutes of baking.....company ready!

Absolutely amazing dish! Never had shitake mushrooms in my life until this recipe and loved them. I agree--prep took a bit more time than I expected but will likely be faster in the future. Served it with whole wheat egg noodles and steamed broccoli and it was excellent and filling. Thanks EW--definitely a keeper!

As usual, another winner from EW......that's why I've subscribed for 3 years now! This recipe had minimal prep, and went together so well. I just had to go out to get shitakes and cream. My attitude is, if you love good food, love to cook, spend the time/money and get the correct ingredients! Believe me, this recipe was worth it. My only problem is that I ended up giving my husband half of my chicken breast......he really could have eaten 2 rather than 1. Plus, I agree that the sauce could be doubled, especially if you're serving with a starch. I just added an entire 8 oz cream and it was perfect, since I tossed angel hair with it. Next time I will double all or maybe just stick with the 8oz cream. In the end, again, simple ingredients, delicate, excellent taste!
