Moroccan Vegetable Soup (Chorba)

Hearty with chunks of beef or lamb, plenty of vegetables and a bit of pasta, this Moroccan soup gets its rich, golden-orange color from turmeric.

Our Junior GS Troop is studying the country of Morocco and decided to make this soup for our Moroccan Dinner Party. The soup was a huge success and was everyone's favorite! There wasn't a drop left at the end of the night! If you want your kids to eat their veggies, this is a great way to go. The troop wants to make it again for our upcoming camping trip. We gave the soup two thumbs up!

I made this twice and we enjoyed it greatly-I could not find turnips so left them out and also left out the cilantro which we don't like-and it was still good. It has replaced Minestrone as our favorite fall vegetable soup.

When I told my husband I was making a kind of beef stew, he made a face, recalling the rubbery stewed meat of his childhood. He was pleasantly surprised by the tenderness of the beef in this soup. The soup was delicious, but I think next time i'll use more turmeric and saffron. (Be careful. Splashed soup may stain your countertop.) You can sometimes get saffron threads imported from Spain at Costco.

This is very tasty. The beef came out super tender, and the broth is flavorful thanks to using beef broth. Only challenge was figuring out what they mean by a "pinch" of saffron? I put in about 10 strands, not having any idea if this is too much.
