Moroccan Spice Mix

This lively blend works well with chicken, swordfish and tuna.
- Grated zest of 1 orange, (1 tablespoon)
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons ground ginger
- 1 teaspoon hot chili powder
- 1 teaspoon coarsely ground pepper
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt, preferably kosher
- 1/2 teaspoon sugar
- 1/4 teaspoon ground cloves
- Mix ingredients together thoroughly.
