Turkey Mini Meatloaves

While turkey can too often lend a depressingly gummy texture to meatloaf, we've improved on the standard by adding couscous, zucchini and lots of spices. The best thing of all? They cook in half the time of a full-size meatloaf and you can have leftovers for a sandwich the next day on toasted whole-grain bread.

Makes 6 servings, 2 loaves each

ACTIVE TIME: 20 minutes

TOTAL TIME: 45 minutes

EASE OF PREPARATION: Easy

1 pound 93%-lean ground turkey
1 medium zucchini, shredded
1 cup finely chopped onion
1 cup finely chopped red bell pepper
1/3 cup uncooked whole-wheat couscous
1 large egg, lightly beaten
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1/4 cup barbecue sauce (optional)

1. Preheat oven to 400°F. Generously spray a nonstick muffin pan with cooking spray.
2. Gently mix turkey, zucchini, onion, bell pepper, couscous, egg, Worcestershire, mustard, pepper and salt in a large bowl, preferably with your hands, without overworking. Equally divide the mixture among the muffin cups. Spread barbecue sauce on top of each loaf, if using.
3. Bake until the meatloaves are cooked through or an instant-read thermometer inserted into the center registers 165 degrees F, about 25 minutes. Let the loaves stand in the pan for 5 minutes before serving.

NUTRITION INFORMATION: Per serving: 196 calories; 6 g fat (2 g sat, 0 g mono); 79 mg cholesterol; 18 g carbohydrate; 19 g protein; 3 g fiber; 368 mg sodium.

This was fast and quite good. My beef-loving husband had seconds, and I enjoyed leftovers for lunch the next day.

My family does NOT like meatloaf. I purposely wouldn't tell them what this was. When they saw it, they made fun - calling it a vegetable muffin! :) But when it was placed on their plate they both loved it and even said it was a repeater!!

I loved it, husband loved, kids not so much. However, I baked them and it makes an easy, quick "on the go" healthy meal for me that is a small portion so I am not tempted to overeat. So, not too kid friendly, but definitely Mom friendly!

This recipe lived up to its billing--a very nice texture. We used grated carrots instead of zucchini. Our kids loved it, and enjoyed the novelty of the muffin shape (we called it Turkey Muffins). We will definitely keep this as one of our favorites.

Absolutely delicious. We used chili sauce instead of BBQ (couldn't find any without high-fructose corn syrup) and used carrots instead of red pepper. Much better than a previous recipe we tried--and much healthier!

I got ground chicken on sale so I mixed it with ground pork and shredded carrots instead of zucchini. My kitchen smelled wonderful while it was baking and tasted even better. Absolutely delicious, and easy!!

I use just a couple shakes of pepper instead of the half tsp. to make it kid friendly and usually 1c. of dry oatmeal instead of couscous because that's what I have on hand. Very easy, quick and tasty.

Made these for my kids and they were a huge hit! :) I added some shredded carrots and added a little more couscous. I was able to get 8 muffins out of the mix, I guess my muffin tin is smaller then the ones used on this site. 1 muffin was plenty for my preschoolers! Will definitely be making this again! THX!

Loved this recipe. Put the zucchini, onions and pepper in food processor and pulsed few times. Also, added 1/4 tsp garlic powder. Sub the egg with flax meal and hot water. It was very easy and fast and will definitely be making again. The only problem is that it needs to rest more than 5 minutes otherwise the muffins will fall apart.
