Mini Mushroom-&-Sausage Quiches

April/May 2005

Your rating: None Average: 3.7 (708 votes)

These crustless mini quiches are like portable omelets. Turkey sausage and sauteed mushrooms keep them light and savory. Small and satisfying, they're also a good finger food for your next cocktail party.

READER'S COMMENT:
"These mini quiches were great!!! My neice Tracy made them for Thanksgiving and we all loved them. I brought some leftovers home and just ate them for breakfast. They are a perfect party snack or appetizer and healthy as well. "

This was a nice change from my usual bowl of oatmeal. My husband and I had them all week for breakfast and were quite satisfied. I made them with turkey sausage, spinach & mushrooms.

I love them. I prefer a spicier taste so I doubled pepper, and pieces of dried jalapenos; excellent

When making quiche, I always use silicone muffin pans and never have a problem with them sticking.

These were pretty good when fresh or refrigerated, but when I froze them, as the tip suggests, I found they were very spongy out of the microwave. Really unappetizing texture -- will probably throw the rest away. Might make them again but certainly wouldn't freeze them.
