Mini Meatloaves

Traditional meatloaf is made with ground beef, pork and veal; here we replace the veal with ground turkey for a tender, flavorful and leaner version of the classic. Baking individual portions in muffin tins speeds cooking, standardizes serving size and produces a moist, delicious main dish.

Makes 8 servings

ACTIVE TIME: 10 minutes

TOTAL TIME: 40 minutes

EASE OF PREPARATION: Easy

8 ounces lean ground beef
8 ounces lean ground pork
8 ounces ground turkey breast
1 large egg, lightly beaten
1/4 cup quick-cooking oats
1/4 cup chopped fresh parsley
1/4 cup ketchup, divided
3 tablespoons low-fat milk
1 small onion, chopped (3/4 cup)
3/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 1/2 teaspoons Worcestershire sauce

1. Preheat oven to 375°F. Coat 8 muffin cups with cooking spray.
2. Mix beef, pork, turkey, egg, oats, parsley, 2 tablespoons ketchup, milk, onion, salt and pepper in a large bowl.
3. Form the mixture into 8 balls and place in the prepared muffin cups. Combine the remaining 2 tablespoons ketchup and Worcestershire sauce and spread about 1/2 teaspoon over each mini meatloaf.
4. Place the muffin pan on a baking sheet. Bake the meatloaves until their internal temperature reaches 160°F, 25 to 30 minutes. Pour off fat before serving.

with the exception of my husband, my family is not a meatloaf-lovin' type of household. however, in my effort to revamp our usual menu of meal rotation, I'm willing to try anything new, especially healthy. we all enjoyed the mini-meatloaves. my kids, ages 5 and 1, gobbled them up. loved the portion size and topping sauce.

These worked out great for my family really delicious & quick to make ahead. The one issue I have with most recipies is the amount of grams of sugar per serving, rarely see it on most recipies I print from Eating Well. Can you help me on determining how much sugar is in this recipie. My husband really loves these mini-loaves.

Sandy, I wish EatingWell would include more detailed nutritional information, too. I entered this recipe into the recipe calculator at sparkrecipes.com, and it says there are 2.5g of sugar per serving.

The sugar amount is found by reading the Ketchup container to see how much you are adding. If you check the bottles in the store you can usually reduce the sugar, but they usually add more sodium if they reduce sugar!! With the natural sodium in the meat, eggs, onions, ketchup and worcestershire sauce along with the added salt I think the sodium content listed may be wrong in this recipe. I did reduce the salt to 1/2 teaspoon, used 1/2 teaspoon pepper, used 1 medium onion, FINELY chopped. I'me not big on meatloaf so I think next time I will try a homemade fruit sauce on top to help change the flavor.
