I liked this recipe. I didn't have ramekins so I put all the egg mixture into a medium sized pyrex container and put it in the oven. I cooked it longer than the directions stated since I only used one container. It turned out pretty well and was yummy :) I put some salsa over top and ate it. The next morning I used the leftovers to make breakfast burritos and they were great.

Everyone gets an individual portion with this vegetarian, Tex-Mex mini casserole. A normal-size casserole like this would take close to an hour to bake—these are ready in half the time. Heatproof ramekins are a cook's best friend—we use them all the time to hold ingredients while cooking. You can buy them at most grocery stores.

Thought this was great. Does need a litle seasoning with salt and pepper. Make sure you squeeze all th eliquids out of th echiles as there was some residual liquid in th ebottom of the dish. Great breakfast dish and would be a great brunch dish as well.
I didn't have small ramekins so I cooked it in a large casserole pan and it worked perfectly. I also added chicken for some extra protein. After it was cooked I added jalapenos, sour cream and salsa and divided it into tortillas for breakfast burritos. YUM!
This was ok. My family really wasn't impressed with it. It was much better with salsa. My husband tried it with the left over taco salad (also on this site) and salsa and made nachos from it and loved it, my 4yr old also loved it that way.
We loved this, but I was a little puzzled about the egg mixture. I used the correct size ramekins but there was way more egg mixture than would fit in there. I made scrambled eggs from the left overs!
