Melon Balls in Port

The traditional pairing of melon and port is updated with a little lime juice.


Melon Balls in Port Recipe

Ingredients

  • 1/3 cup tawny port
  • 1 tablespoon honey
  • 1/2 teaspoon freshly grated lime zest
  • 1 tablespoon lime juice
  • 5 crushed mint leaves
  • 1 1/2 cups cantaloupe balls
  • 1 1/2 cups honeydew melon balls
  • Fresh mint, for garnish

Preparation

  1. Stir together port, honey, lime juice, lime zest and mint leaves in a bowl until the honey is dissolved. Add cantaloupe and honeydew melon balls and stir gently to coat them. Cover with plastic wrap and chill in the refrigerator for 30 minutes, stirring every 10 minutes or so. Serve garnished with fresh mint leaves.
