yeah, i really wish people would start excluding coconut oil when talking about saturated fat, and at least start noting that saturated fat from coconut and it's medium chain fatty acids (MCFTs) have a different effect on our bodies and health than "regular" saturated fat

I wonder if this recipe would be better or worse with a little crushed pinapple added in. Or, maybe, orange zest? Any opinions? Thank you

I know about the fats and I know about the health benifits of coconut milk, now could someone actually give a review of the recipe itself. I was really hoping to hear someone actually say it's yummy before I cook it for thanksgiving. lol

Definitely - coconuts and their fats are very good for you. The types of fat contained in coconuts has been shown to be extremely beneficial in a host of different diseases including cancer, HIV (and AIDS), and several others.

Coconut oil is one of the healthiest fats around. More and more research is showing what a powerhouse it really is for health, including boosting thyroid function. Not all fats are bad. Avcocado is another great fat that your body needs!
