It doesn’t get much easier—or more delicious—than this speedy recipe for roast salmon for two topped with a smoky maple-mustard sauce. The sweetness of the maple balances the tangy mustard; smoked paprika or ground chipotle adds another layer of flavor. Ask at the fish counter to have the salmon cut into two 4-ounce fillets with the skin removed. Serve with roasted green beans and whole-wheat couscous tossed with pecans and chives.

I love this recipe to bits. It's about as fast and easy as cooking gets, and the maple mustard sauce is delicious.

That being said, except for the first time I made this I've never cooked the salmon as directed. Instead, I put a pan half full of water in the oven with the salmon and bake it for 25-30 minutes at 250 degrees. It makes all the difference to the texture.

This was so easy to make. My hubby who doesn't really love salmon loved this. I will definitely make it again!
