This was the first lemon meringue pie I've ever made. I did use pre-made unrolled crust...
The filling was so easy to make. I was VERY impressed with how much lemon flavour there was.
I had a large round pie pan, so the meringue seemed to spread out pretty thin. In my situation, I may increase the meringue recipe slightly.
Each cut looked perfect. The filling held its shape beautifully and the meringue was light and fluffy.
It looked impressive and was a big hit at a dinner party.
