Lemon Chicken Stir-Fry

Spiked with lots of zesty lemon, this delectable chicken stir-fry has a colorful mix of snow peas, carrots and scallions. But feel free to substitute other thinly sliced vegetables, such as bell peppers or zucchini. Serve with: Rice noodles or brown rice.

This dish was WAY to LEMONY!!! My finance and I were unable to eat it. If you really like lemon you would love this dish. We both agreed it was savable, less (or omit) the lemon, more garlic and probably some spice (Cayenne, red pepper flakes, something). It was really quick to make and would probably add some extra veggies (bell peppers, mushrooms.....etc) next time.

this was awesome!!! it was SO quick to make and any veggies will work! i used 3 zucchinis, 10 oz mushrooms, 1 bell pepper and bunch of green onions - YUM! it was lemony (it is lemon chicken after all!), but not too overpowering... if you don't like the strong lemon taste, leave out the lemon zest and it should be just right! also, i think broccoli or asparagus would work well too! this dish made a TON of food! its a keeper!

I used red and green pepper and onion because that's all we had on hand, plus the garlic, and it turned out amazing! Definitely will make again.

I must have missed something! This was a bit of work and certainly not worth the effort - wish I could be more positive but no one in the family wanted to eat this Lemon Chicken.

I just made this dish and my entire family loved it! The lemon in the sauce was just perfect. I served mine with rice noodles and it was great. It will become a regular.
