Lemon Chicken Stir-Fry

May/June 2009

Your rating: None Average: 4 (459 votes)

Spiked with lots of zesty lemon, this delectable chicken stir-fry has a colorful mix of snow peas, carrots and scallions. But feel free to substitute other thinly sliced vegetables, such as bell peppers or zucchini. Serve with: Rice noodles or brown rice.

Healthy, easy and good for you

This was an easy meal to prepare and fast to cook. I used all the ingredients listed, but used real lemon juice instead of an actual lemon. You can control the lemon flavor easier that way. The only alteration I would make to the list of ingredients is to halve the corn starch. I served it with Udon noodles. You know it's good when my husband goes back for seconds!

Very good. It does have a strong lemon taste (so half the lemon if you're opposed to strong lemony flavors), but it went over well with my family. I substituted broccoli, zucchini, and a diced white onion for the snow peas, scallions, and peppers and it turned out very well. Another keeper.

This is a great recipe! I loved it! I was very hesitant about it through the entire process cause I really don't eat many vegetables but I'm trying to change my eating habits and this recipe was just delicious! I never knew vegies could taste so good. I specially loved the snow peas!
