Lemon Chicken Stir-Fry

Spiked with lots of zesty lemon, this delectable chicken stir-fry has a colorful mix of snow peas, carrots and scallions. But feel free to substitute other thinly sliced vegetables, such as bell peppers or zucchini. Serve with: Rice noodles or brown rice.

We loved this. After reading the comments, I left out the lemon zest, but kept the lemon juice, and it was perfect. I also left out the oil, and used a non-stick wok. (I used a little bit of water to stop the chicken sticking too much to the wok.) And I used guar gum instead of cornstarch because it's healthier. The snow peas are a must, but otherwise any additional vegetables would work well - I used carrots, green beans, baby marrow sliced lengthways, and mushrooms. Served over brown basmati rice, it was delicious.

Delicious, lots of vegetables, makes a complete meal with rice/pasta

my own twist

i added salt, pepper, a dash of cumin and i squeezed the left over lemon juice on the chicken before i stir fried it. i also noticed many complained of to much lemon well i added more carrots,snow peas and chicken. my family loved this meal so much i had to give a better rating (i used all organic ingrediants)

Very flavorful!

This was a really great dish with a bold, delicious flavor. I used fresh green beans instead of sugar snap peas, but followed the recipe exactly besides this. I will be making this again, my boyfriend also loved it.

Very Lemony

Overall, this was a good dish- lots of fresh veggies and filling. My husband and I thought the lemon flavor was very overpowering though. Next time I will either half the amount of lemon zest or leave it out all together. Could use a little more spice as well. Good recipe for all those leftover veggies in the house though.
