My husband is pretty neutral on kale-he can take it or leave it. This recipe he declared "a keeper," which is no small feat for a kale dish. I didn't make any changes to the recipe, however I did opt to parboil my own potatoes. Sorry, but I can't in good conscience spend money on pre-shredded potatoes. I am the same person who side eyes the person buying those pre-chopped onions. Are we really that lazy as a society?
Oh, right. Off soapbox, back to recipe. I served it with steak (great pairing!) then ate leftovers with an over easy egg and I was in heaven. This will be in the regular rotation!
