Fantastic!!!

This was super tasty and easy! What a great way to use up a potato and a bunch of kale. I'll be making it over and over again for sure! The only thing I'll do differently in the future is put everything EXCEPT the kale into the skillet and let it cook; I'll add the kale when the potatoes are mostly browned (it took too long for the potatoes to brown and the kale cooked too much with all of it together). Can't wait to eat the leftovers with breakfast tomorrow!!!

I love Kale my sister loves Potatos

I made this for my sister and I, both Veggies. She really liked it, threw some ketchup on top. I did without the ketchup. We both agree that it could use some garlic but is really awesome regardless, and cheap to make.

My new favorite kale dish!

My husband is pretty neutral on kale-he can take it or leave it. This recipe he declared "a keeper," which is no small feat for a kale dish. I didn't make any changes to the recipe, however I did opt to parboil my own potatoes. Sorry, but I can't in good conscience spend money on pre-shredded potatoes. I am the same person who side eyes the person buying those pre-chopped onions. Are we really that lazy as a society?

Oh, right. Off soapbox, back to recipe. I served it with steak (great pairing!) then ate leftovers with an over easy egg and I was in heaven. This will be in the regular rotation!

Get your greens in a tasty way!!

This recipe is marvelous!!! The recipe didn't specify if the horseradish was minced horseradish root or prepared horesradish sauce....I used the root and made a full order. My hubby and I split it and he said that next time he wants me to double it and that he loves it. This from a man who sometimes tries a recipe and says "It is ok but I don't want it again!" We had it for supper with fried eggs.
In my book of five star recipes!!!
