Refreshing salad if you like the vinegar flavor, which I do. I served fresh sliced tomatoes and put the cucumber salad over them. Great combo.





My husband and I both loved this salad. It was extremely simple and fast to make, and worked well for a picnic. The toasted sesame seeds were delightful, and really gave the salad it's wonderful flavor. I didn't have rice vinegar, but used white wine vinegar instead, which turned out delicious.





I have made this several times & we never tire of it. It is easy to make, healthy & delicious. It goes perfectly with many meals but I like to use it to balance an otherwise heavy meal where a regular salad would be too much. I may add a few raw carrots as well.





I always get this cucumber salad when I go to my local sushi place. I looked up a few recipes and this was the perfect copycat. I cut my cucumber into thicker slices and added fresh sliced strawberries. The perfect "sweet/sour/salty" combination.
