This is an ok recipe if you want something easy to make and fullfilling. I found a similar recipe that is healthier (if your counting calories like me) at www.skinnytaste.com lower in sodium, carbs, calories, fat and sugar and is equally as tasty!

This is my go-to recipe for huevos rancheros. My (small) changes: I scramble the eggs, I top each serving with diced avocado with the cheese (run under broiler briefly), and I usually crisp tortillas (flour or corn) under the broiler before loading with beans, etc. One of my husband's very favorite weekend breakfasts. The only reason it didn't get 5 stars is that it tends to be a bit time consuming - but maybe I'm just in slow-mo on a weekend morning.
