This is one of the few soups that make the cut in summer. Serve it chilled to take the edge off a hot August night.

quick and easy....versatile recipe, added low-fat yogart and parsley in stead of cheese and tarragon...have added to my meal plans ...


Great & Tasty. Being a new vegan. I used veg. broth and flavored tofu, instead of chicken broth and cheddar cheese, also added less sea salt, in place of salt. We all need to be more wary of what we eat. -surfergirlca58


This was ok for a quickie lunch soup. I've made something similar to this from Weight Watchers which I felt was much nicer.
