I prefer a deeper flavor. I added an additional 1-2 tsp of fresh tarragon as well as 2 heaping TBL of a curry mix. The additional flavor made for a DELICIOUS soup that gets better as it sits in the fridge. It's a go-to soup for me.

Wanted a healthy veggie soup and found this at the top of the Google search I did. The texture is so smooth you'll swear the recipe contains lots of high-fat, calorie laden ingredients, but it doesn't! One of the best soups I've ever made. My hubbie loved my addition of crispy prosciutto as a topper. The other sub I made was to use chicken broth.
The soup itself was fantastic. I would caution against using a blender though, as mine spit all the way through...ruining my blender. I was able to use a mixer while leaving it in the original pot-this worked great!
I made this with two zucchini's and one squash. I also added garlic and parsley and extra cheese. It was very good! Looking forward to making it again!
