This is one of the few soups that make the cut in summer. Serve it chilled to take the edge off a hot August night.

"This soup was very bland. Followed the recipe as written not looking forward to eating it over the next few days since I don't want to waste food. "

Love this!

The soup tastes great and is almost a little spicy. I was apprehensive to try this at first but I thought it was great! My mother loved it when I gave her a taste

Taste is great, has a kick to it, very tasty
Super easy and delicious!

I usually use fresh basil and it's excellent! Much easier to use a stick blender rather than a standard blender or food processor. I also like to leave some small chunks for texture.

Easy, quick, healthy
Needed adjustment

I prefer a deeper flavor. I added an additional 1-2 tsp of fresh tarragon as well as 2 heaping TBL of a curry mix. The additional flavor made for a DELICIOUS soup that gets better as it sits in the fridge. It's a go-to soup for me.

Easy to prepare, freezes well.
Herbed Zucchini Soup with curry
Easy and delicious

Wanted a healthy veggie soup and found this at the top of the Google search I did. The texture is so smooth you'll swear the recipe contains lots of high-fat, calorie laden ingredients, but it doesn't! One of the best soups I've ever made. My hubbie loved my addition of crispy prosciutto as a topper. The other sub I made was to use chicken broth.

quick, easy, flavorful and able to be adapted
Broken Blender :-(

The soup itself was fantastic. I would caution against using a blender though, as mine spit all the way through...ruining my blender. I was able to use a mixer while leaving it in the original pot-this worked great!
