I usually use fresh basil and it's excellent! Much easier to use a stick blender rather than a standard blender or food processor. I also like to leave some small chunks for texture.
I prefer a deeper flavor. I added an additional 1-2 tsp of fresh tarragon as well as 2 heaping TBL of a curry mix. The additional flavor made for a DELICIOUS soup that gets better as it sits in the fridge. It's a go-to soup for me.
Wanted a healthy veggie soup and found this at the top of the Google search I did. The texture is so smooth you'll swear the recipe contains lots of high-fat, calorie laden ingredients, but it doesn't! One of the best soups I've ever made. My hubbie loved my addition of crispy prosciutto as a topper. The other sub I made was to use chicken broth.
