What’s Cooking in the EatingWell Test Kitchen

The EatingWell Test Kitchen was recently presented with a challenge: develop a line of gourmet vegetarian meals that would use fresh ingredients and could be microwaved and served in 4 minutes. The challenger? FreshDirect, a growing online fresh food and meal delivery service for some 150,000 customers in the New York metro area.

We happily, and deliciously, met the challenge: the 8-recipe EatingWell line debuts this month. If you're lucky enough to live in the New York metro area, you can order these fresh, packaged meals online at FreshDirect.com. Each portable pack has a balanced blend of vegetarian proteins, vegetables and grains for just 500 calories (or fewer). Try the recipe for one of our favorites, Black Bean & Hominy Succotash with Barbecued Portobello Mushrooms. We love the smoky mushrooms paired with a savory succotash.

Even if you don’t live in New York, it’s quick and easy to whip up a healthy, delicious vegetarian meal at home. Check out our collection of vegetarian recipes for 25 more delicious options for meatless meals. The dishes address one of the core challenges to eating vegetarian—figuring out what to organize your meal around. When you eat meat it’s easy to think, “I’m grilling chicken, what do I eat with it?”

To get your thoughts going, here are 4 produce items to build a vegetarian meal around:

  1. Portobello mushrooms: Though frozen veggie burgers are really convenient, why not build a fresh veggie burger around a meaty portobello mushroom? Try our Mediterranean Portobello Burger; it’s like Greek salad and veggie burger all in one!
  2. Eggplant is a great vegetarian stand-in for meat in your pasta sauce. Just toss it with jarred marinara sauce, like in Pasta with Eggplant Ragu, for a quick supper.
  3. Bell peppers are delicious raw, roasted or grilled. You can stuff them with leftover rice, cheese and other vegetables. Or try them in this delicious Red Pepper & Goat Cheese Frittata.
