Amazing that I could hide this much healthy stuff in a kid friendly meal! My step-daughter (7 years old) LOVES Hamburger Helper, but I am opposed to serving anything with that much salt and try to make all home made meals (ie. almost no processed foods). Out of all of the healthy meals we have tried over the last couple of months this has been the biggest hit - she got thirds and asked about having it for a snack tomorrow! I was amazed with the quantity and happy that I planned a leftover night this week. I agree with some of the other posters that this recipe is a little on the bland side, but it really does taste super similar to regular Hamburger Helper.
My only adjustments: No thyme (didn't have any on hand so I just left it out), used a full package of enriched macaroni noodles (not whole wheat, 12oz - this seemed to be perfect for the amount of liquid and for a nice noodley dish), used a full 8 oz of low fat sour cream which I think made the consistency really creamy and nice at the end. In addition, my blender broke down and I haven't purchased a new food processor yet, so I prepped by hand - diced mushrooms and garlic, grated then chopped the carrots and onion and mixed them all in a bowl before adding them.
This is a definite winner for a kid friendly meal!
