I found this dish very tasty and easy to make.
My husband will normally not touch carrots, mushrooms, or onions -- and he had seconds and asked me to put this into our rotation! Great way to get sneaky veggies into picky eaters.
I agreed with some other reviewers about seasoning adjustments--I only put 1 tsp of thyme in, and would probably try subbing something like oregano altogether next time. I also put in at least a heaping teaspoon of salt.
