Great recipe. I reduced the ground beef to 3/4 lb, replaced the sour cream with hummus for thickness and extra fiber and added peas. The fiancee, who hates vegetables, LOVED it. Will definitely make again.

Was looking for a kid-friendly one skillet meal that had some hidden veggies. I think the large amount of dried thyme was a mistake in this recipe - it overwhelms all other flavors. Next time I might try adding tomato paste and a little paprika as some other users suggested. Hopefully I might still be able to doctor up the leftovers!
I used ground turkey instead of hamburger. I did use the food processor and my veggies were not mushy. They were perfect, just don't over process. In addition, I added tarragon to this and a touch of cinnamon. I added a half of a bun to the plate to soak up the extra sauce. Will make this again.
In order to make this kosher, I replaced the sour cream with coconut milk I had on hand. It was delicious! You could probably leave it out altogether by adding a little more broth.
I made this using turkey mince, the pureed veggies seemed to bulk out the meat and create a nice thick sauce. I also added paprika, and tomato paste for a stroganoff style feel. It was very yummy, and the kids LOVED it. I think you could even add some red lentils if you want extra fibre. I didn't add the extra water and therefore didn't need the flour.
