Guacamole-Stuffed Eggs

Leftover guacamole serves as a delicious stuffing for hard-boiled eggs.

Makes 6 servings

ACTIVE TIME: 10 minutes

TOTAL TIME: 25 minutes

EASE OF PREPARATION: Easy

6 large eggs
1/2 cup Quick Guacamole (recipe follows)
Kosher salt & cracked black pepper to taste

1. Place eggs in a single layer in a saucepan; cover with water. Bring to a simmer over medium-high heat. Reduce heat to low and cook at the barest simmer for 10 minutes. Remove from heat, pour out hot water and run a constant stream of cold water over the eggs until completely cooled.
2. Cut each egg in half; remove and discard yolks. Fill each half with 2 teaspoons guacamole. Sprinkle with salt and pepper.

NUTRITION INFORMATION: Per serving: 55 calories; 3 g fat (1 g sat, 0 g mono); 0 mg cholesterol; 2 g carbohydrate; 4 g protein; 1 g fiber; 223 mg sodium; 48 mg potassium.
