Grilled Salmon with Tomatoes & Basil

This recipe is so beautiful and yet so simple to prepare—it’s perfect for entertaining. You just spread a side of salmon with minced garlic, sprinkle with fresh basil, then layer sliced tomatoes on top. Put it on the grill for 10 minutes and you’re done!

I also cedar plank grilled mine, but I did not have a timing problem. Maybe because I only made half a recipe? Anyway, I agree that this almost made me cry, it was so delicious--especially with the cedar infusion. I served this with the roasted corn salsa http://www.eatingwell.com/recipes/roasted_corn_salsa.html. Amazing!
I grilled our fresh wild caught sockeye salmon fillet on a cedar plank. The only difficulty I had was with the cooking time. The cedar plank may have extended the time, but the slices of tomato seemed to keep it from cooking as quickly as well. But once it hit my mouth! Wow. I used Brandywine tomatoes from the local farmers' market and fresh basil from my garden and it was so good with the cedar flavor infused in it that I almost CRIED. Absolutely amazing.
So good! On the table in 15 minutes.
