Greens with Parmesan Vinaigrette Recipe

Ingredients

  • 1/3 cup freshly grated Parmesan cheese
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white-wine vinegar
  • 1/2 teaspoon finely chopped garlic
  • 1/2 teaspoon Dijon mustard
  • Salt & freshly ground pepper, to taste
  • 8 cups mixed salad greens

Preparation

  1. Whisk together Parmesan, oil, vinegar, garlic and mustard. Season with salt and freshly ground pepper. Toss with salad greens.

Per serving: 153 calories; 13 g fat ( 3 g sat , 8 g mono ); 7 mg cholesterol; 3 g carbohydrates; 6 g protein; 2 g fiber; 275 mg sodium; 351 mg potassium.
