Tangy Green Goddess Dressing

Avocado and herbs lend color to this creamy dressing.

Makes 1 3/4 cups

EASE OF PREPARATION: Easy

1 avocado, peeled and pitted
1 1/2 cups fat-free buttermilk
1/4 cup fresh chopped herbs (such as tarragon, sorrel, mint, parsley and/or cilantro)
2 tablespoons rice vinegar
1/2 teaspoon salt

Place avocado, buttermilk, herbs, vinegar and salt in a blender and puree until smooth.

NUTRITION INFORMATION: Per 2-tablespoon serving: 15 calories; 1 g fat (0 g sat, 1 g mono); 0 mg cholesterol; 1 g carbohydrate; 1 g protein; 0 g fiber; 54 mg sodium; 35 mg potassium.

I added a green onion and about 1/4 t. fresh ground pepper. I really like that this is so low fat but still tastes like a full-fat dressing.
