For this recipe, convenient store-bought potato gnocchi are tossed with delicate ribbons of zucchini, shallots and cherry tomatoes that have all been sautéed in nutty browned butter.

This dish was so easy to make. I happen to have a mandolin slicer, so the zuchinni ribbons weren't a problem. I didn't have any fresh tomatoes, so I used a can of diced plain tomatoes that I drained and patted dry. I did double the butter. It was fantastic. My husband practically licked the bowl clean! I didn't have nutmeg, so I used cinnamon which came out pretty tasty. I actually liked the dish more the next day after the flavors settled in the gnocchi a bit. I had a hard time making zucchini ribbons too :( arickhoff |

Love this recipe! it's a staple in our household. I discovered a fast and easy way to make the zucchini ribbons. I used an apple corer-peeler-slicer machine on segments of large, thick zucchini. It peels the zucchini and makes very thin ribbons in one step. Susan, NY |

Made this last night for my family including my vegan daughter and her boyfriend. I lightly browned 2 cloves of chopped garlic in 1T olive oil instead of the butter, then added the shallots and zucchini. I followed the rest of the recipe, omitting the parmesan cheese. Once they were served, I drizzled a little browned butter & grated parm over the remaining servings tossed everything well. It was delicious & everyone enjoyed! deetsgooch, Menifee, CA |
