I cooked this with many tweaks. I only made one serving of this, so it was easy. cooked quinoa pasta and peas in one boiling water pot ( why does everyone here hate the peas in this?). I then cooked the shrimp in garlic, olive oil, lemon, white wine & red pepper.
I mixed plain, regular yogurt with sour cream & lemon in the bottom of a bowl. Then when all was done, I added the pasta, peas & shrimp to the bowl & mixed it all in. Added parmesan, pine nuts & parsley and I thought is was pretty good & filling! I'm eating my dinner in halves tonight!
Omit the peas, wrong flavor and texture for this combo. Added more garlic and lemon juice. Loved the yogurt sauce, but reduced the amount. Very tasty.
I made this for my husband and father in law and we all loved it. It's a little tangy but I like that, creamy and I didn't feel guilty about eating it.
I am a registered dietitian and I loved the idea of this recipe but agree with many comments that the flavor is a bit too tangy and the texture too runny. I used plain Greek yogurt instead (personalrd.com) and the result was much better!
