These turned out surprisingly well--my expectations were low, and I was pleasantly surprised. Making the egg mixture was a lot like making pecan frosting for German Chocolate Cake, just be patient. I, of course, was too impatient to wait 45 minutes for them to cool, but you actually DO need to wait 45 minutes or they won't form into balls. Greased hands were key, and I found it easier to roll all of the balls first and then roll them in the coconut last--that way I wasn't going back and forth with coconut sticking to my hands. The only problem is that they are too sweet--maybe they'll be less sweet cold from the refrigerator? I added a couple handfuls of oats to temper the sweetness, and the balls still rolled just fine. I imagine you could substitute/add a lot of delicious ingredients to change things up--dried apricots maybe? Roasted sunflower seeds?
