Eggplant Pomodoro Pasta

Diced eggplant turns tender and tasty sautéed with garlic and olive oil. Toss with fresh plum tomatoes, green olives and capers and you have a simple light summer sauce. We like it over angel hair pasta, but any type of pasta will work.

This was easy and delicious. Would probably even convert anti-eggplant people. Next time I'm going to add mushrooms.
I am trying to eliminate certain foods from my diet such as sugar, gluten, soy and dairy. I made this dish tonight for the first time but substituted quinoa gluten-free pasta for angel hair. It was wonderful and filled me up! I didn't miss the cheese or the bread that I would normally have with this type-dish. Thank you for this recipe! Next time, I will throw some pine nuts on top! :)
pretty much all of the ingredients are either in your cupboard already or can be bought fresh at the farmers market. This would be a great meal to feed a family as it is quick, economical and healthy.
I added pancetta, white beans, fresh basil and parsley. This recipe was great! Can't wait to make it for my friends!
